Get a solid dose of fruit and vegetables with this zesty slaw recipe. Combine it with any protein or by itself. Who knew a coleslaw could pack so much punch!
1 cup red cabbage, thinly shredded
2-3 kale leaves, stalks removed, thinly shredded – optional
1 carrot, thinly cut
1 JAZZ apple, thinly cut
Dried fig – thinly sliced
A handful of coriander, thinly shredded
1 clove of garlic
1 tablespoon Dijon mustard
2 teaspoons honey
1/4 cup fresh lemon juice
1/2 cup olive oil
A pinch of pink Himalayan salt
Combine all the ingredients in a bowl.
Set to one side and make the dressing.
Whizz the Zesty Dressing ingredients together until well combined.
Lightly coat the JAZZ apple slaw with the dressing.
Sprinkle fresh coriander on top. Serve with grilled fish, pork or chicken or enjoy solo.
