2 tbsp extra virgin olive oil

Thinking ahead, it
s best to cut the tomatoes up, break the mozzarella up into chunks an

Heat a large frying pan, put the sausages in with a little olive oil and
cook over a gentle heat, turning
them constantly so they brown on all sides. When they are half-way to browni

to crisp up, move them to the outside edges of the pan and break the egg

plates, butter the toast and serve at once.
